Style: A deep but very precise nose of black fruits, spices with a stony/mineral aspect. The 2022 possesses an ample and concentrated body, yet without heaviness. The acidity keeps the wine energetic and the tannins are fine, supple in the mid-palate but become more structuring on the finish. The terroir’s signature particularly stands out in the finish: long, fresh, mineral, slightly licorice-like, with beautiful persistence.
Pairing idea: Braised beef cheek, roasted pigeon, young duck, veal sweetbreads with morels…
