Style: A macerated Aligoté that offers body and some tannins, making for a delightful taste surprise. The style is clearly “natural wine,” which benefits from 10 to 15 minutes of aeration to reveal its full character. Aromas of apples and quince.

Here’s a pairing suggestion: a few soft cheeses like Brie or Camembert (made with raw milk, of course!), and some country-style pâté on a slice of sourdough bread.
