The Cellar
Yesterday and Today
Our Story
The story of a family wine cellar at the heart of Burgundy wines
If the stones of Le Caveau in Auxey could speak, they would tell the viticultural history of Auxey-Duresses and Burgundy. They would speak of the years etched in stone, the harvests of yesteryear, the wines vinified, aged, and then matured here, in the house where Berthe and Maurice Damy, François’s grandparents, produced their wines according to Burgundian expertise.
They would also hold the memories of the laughter and songs of the harvesters, cellar anecdotes, shared bottles, and evenings enlivened by Berthe and Maurice, who welcomed their customers late into the night.
Today, this tradition continues in a different way. The cellar has become a place for selling Burgundy wines, for tasting and discovery, where local history, terroirs, and family hospitality continue to be passed on, glass in hand.
